Cuisine American
- 6 large eggs
- 1 pre-made pie crust thawed if frozen
- 2 tablespoons chopped onions
- ½ bunch of fresh spinach chopped (about 1 cup chopped)
- ½ cup shredded cheddar cheese
- ¼ cup feta cheese crumbles
- 1 tablespoon butter cut into small pieces
- ½ teaspoon salt
- ¼ teaspoon pepper
Preheat your oven to 350°F (175°C).
If your pie crust is frozen, make sure to thaw it out as per the package instructions.
Using a fork, poke holes in the bottom of the pie crust to prevent air bubbles while baking. Pre-bake the pie crust for 10 minutes at 350°F (175°C).
In a large bowl, whisk together the eggs, salt, and pepper, and set aside.
Spread the chopped onions evenly over the pre-baked pie crust.
Add the chopped spinach on top of the onions.
Sprinkle the shredded cheddar cheese over the spinach layer.
Now, sprinkle the feta cheese crumbles over the cheddar.
Slowly pour the egg mixture over the layered ingredients in the pie crust.
Place the pie on a cookie sheet to catch any spills and top it with the small pieces of butter.
Bake the quiche at 350°F (175°C) for 24-30 minutes or until the filling is completely set.
Once done, allow the quiche to cool for about 5 minutes before serving.
Feel free to add your favorite ingredients to customize the quiche. Sautéed mushrooms, diced tomatoes, or even cooked bacon make excellent additions!
If you're looking for a healthier version, use a whole-grain pie crust and low-fat cheese options.
This quiche is also fantastic for meal prepping – make it ahead of time and enjoy slices throughout the week!
