Ingredients
  

  • 6 large eggs
  • 1 pre-made pie crust thawed if frozen
  • 2 tablespoons chopped onions
  • ½ bunch of fresh spinach chopped (about 1 cup chopped)
  • ½ cup shredded cheddar cheese
  • ¼ cup feta cheese crumbles
  • 1 tablespoon butter cut into small pieces
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • If your pie crust is frozen, make sure to thaw it out as per the package instructions.
  • Using a fork, poke holes in the bottom of the pie crust to prevent air bubbles while baking. Pre-bake the pie crust for 10 minutes at 350°F (175°C).
  • In a large bowl, whisk together the eggs, salt, and pepper, and set aside.
  • Spread the chopped onions evenly over the pre-baked pie crust.
  • Add the chopped spinach on top of the onions.
  • Sprinkle the shredded cheddar cheese over the spinach layer.
  • Now, sprinkle the feta cheese crumbles over the cheddar.
  • Slowly pour the egg mixture over the layered ingredients in the pie crust.
  • Place the pie on a cookie sheet to catch any spills and top it with the small pieces of butter.
  • Bake the quiche at 350°F (175°C) for 24-30 minutes or until the filling is completely set.
  • Once done, allow the quiche to cool for about 5 minutes before serving.

Notes

Feel free to add your favorite ingredients to customize the quiche. Sautéed mushrooms, diced tomatoes, or even cooked bacon make excellent additions!
If you're looking for a healthier version, use a whole-grain pie crust and low-fat cheese options.
