Ingredients
  

  • 4 chicken thighs skins removed (approximately 1 lb. / 450g bone-in or boneless)
  • 8 cups 1.9 liters chicken broth, low sodium
  • 6 cups 1.4 liters water
  • 2 tablespoons olive oil for sautéing vegetables
  • 1 medium onion finely chopped
  • 2 medium celery sticks finely chopped
  • 2 carrots sliced into rings
  • 6 oz. 170g rotini pasta
  • 3 tablespoons fresh or frozen dill
  • 1 teaspoon Mrs. Dash or your favorite salt-free seasoning
  • 1 tablespoon sea salt or to taste
  • 1 garlic clove pressed

Instructions
 

  • In a large soup pot, combine 6 cups of water with 8 cups of low-sodium chicken broth and 1 tablespoon of sea salt. Bring it to a boil, then add the chicken thighs. Partially cover the pot and let it boil for 20 minutes while you prepare the vegetables, skimming off any foam that rises to the top.
  • In a large skillet over medium-high heat, add 2 tablespoons of olive oil and sauté the finely chopped onion and celery until softened. Transfer the sautéed vegetables to the pot.
  • Add the rotini pasta and sliced carrots to the soup pot, and continue cooking for 15 minutes at a low boil, or until the pasta reaches the desired softness.
  • While the pasta is cooking, remove the chicken thighs from the pot and use forks or your hands to shred the chicken, discarding any bones and fat. Return the shredded chicken to the pot.
  • Season the soup with 1 teaspoon of Mrs. Dash (or your preferred seasoning) and more salt to taste if needed. Press in the garlic clove. Finally, add 3 tablespoons of fresh or frozen dill and remove the pot from the heat.

Notes

Feel free to adjust the amount of salt and seasoning according to your taste preferences.
