Ingredients

  • 1 c. shredded provolone
  • 4 boneless skinless chicken breasts pounded to ¾ inch thickness

Marinade Ingredients:

  • 1 tablespoon minced garlic
  • ½ c. olive oil
  • 3 tablespoons Worcestershire sauce
  • 1 teaspoon lemon juice
  • ½ c. prepared ranch dressing
  • 1/2 teaspoon pepper
  • 1 teaspoon vinegar

Ranch Spread:

  • ¼ c. ranch dressing
  • ¼ c. grated Parmesan

Parmesan Crumb Topping:

  • 2 tablespoons melted butter
  • ½ c. panko bread crumbs
  • c. shredded Parmesan
  • 1 teaspoon garlic salt

Instructions

  • Mix the marinade ingredients and pour this on top of the chicken. Place the chicken in the fridge to marinate for 2 to 3 hours up to overnight.
  • Then, grill the marinated chicken for 12 to 15 minutes.
  • To make the Ranch Spread, combine 1/4 c. each of the grated Parmesan and Ranch dressing.
  • Mix the bread crumbs, garlic salt, shredded Parmesan, and butter to make the Parmesan crumb topping until the crumbs are evenly moistened.
  • In the center of the oven, position the oven rack and preheat the broiler.
  • Into an oven-safe casserole dish, transfer the cooked chicken. On top of each breast, spread 2 tbsp of the Ranch spread and top with the provolone and Parmesan crumb topping. Broil until the cheese has melted and the crumb topping is light brown.
