What You Need To Make This Chicken Fajita Casserole
Olive Oil
Chicken Thighs: I use boneless skinless thighs, but you are welcome to use chicken breast, too!
Bell Peppers: You can use your favorite color.
Yellow Onion: I use yellow onion, but you can use a sweet, white, or red onion.
Homemade Fajita Seasoning Recipe or Copycat Taco Seasoning Mix Recipe: Use a healthy seasoning mix. I highly suggest making your seasoning mix.
Sour Cream
Cream Cheese
Shredded Cheddar Cheese: Feel free to use mild or sharp shredded cheese. Or swap it with pepper jack cheese if you prefer it spicy!
Optional (for serving): avocado slices, shredded cheese, guacamole, fresh cilantro, or salsa. For spicy lovers, do not forget the hot sauce!
How To Make Chicken Fajita Casserole
Step 1: Sauté the chicken thighs or breasts in an oven-proof skillet with olive oil on medium heat until done. Once the internal temperature of the chicken reaches 165 degrees, the chicken is perfect! Set the chicken aside when done.
Step 2: For about 3 to 5 minutes, sauté the onions and peppers until tender.
Step 3: To the pan, return the chicken. Add the fajita seasoning, sour cream, and cream cheese. Stir well until everything is combined.
Step 4: On top, sprinkle the shredded cheddar cheese. Bake at 350 degrees F for 15 to 20 minutes or until the cheese is bubbly.

Ingredients
- 6 (4 to 6 oz. each) boneless skinless chicken thighs or breasts cut into bite-sized pieces
- 1 tbsp. olive oil
- 4 bell peppers sliced feel free to vary the colors
- 1 small onion sliced
- 1 c. sour cream
- 2 c. cheddar cheese grated
- 4 oz. cream cheese softened
- 1 recipe or package of fajita seasoning mix
- optional: avocado, guacamole, sour cream, and salsa for serving
Instructions
- Set the oven to 350 degrees F.
- Saute the chicken in olive oil over medium heat until the chicken is cooked through. Set the chicken aside when done.
- In the same skillet, saute the onions and peppers until softened.
- Place the chicken back into the pan. Add the taco seasoning, sour cream, and cream cheese. Stir well.
- On top, sprinkle the cheese. Bake in the preheated oven for about 20 minutes or until the cheese is bubbly.
