What You Need To Make This Chicken Fajita Casserole
Chicken Thighs: I use boneless skinless thighs, but you are welcome to use chicken breast, too!
Bell Peppers: You can use your favorite color.
Yellow Onion: I use yellow onion, but you can use a sweet, white, or red onion.
Homemade Fajita Seasoning Recipe or Copycat Taco Seasoning Mix Recipe: Use a healthy seasoning mix. I highly suggest making your seasoning mix.
Shredded Cheddar Cheese: Feel free to use mild or sharp shredded cheese. Or swap it with pepper jack cheese if you prefer it spicy!
Optional (for serving): avocado slices, shredded cheese, guacamole, fresh cilantro, or salsa. For spicy lovers, do not forget the hot sauce!
How To Make Chicken Fajita Casserole
Step 1: Sauté the chicken thighs or breasts in an oven-proof skillet with olive oil on medium heat until done. Once the internal temperature of the chicken reaches 165 degrees, the chicken is perfect! Set the chicken aside when done.
Step 2: For about 3 to 5 minutes, sauté the onions and peppers until tender.
Step 3: To the pan, return the chicken. Add the fajita seasoning, sour cream, and cream cheese. Stir well until everything is combined.
Step 4: On top, sprinkle the shredded cheddar cheese. Bake at 350 degrees F for 15 to 20 minutes or until the cheese is bubbly.
How To Serve The Chicken Fajita Casserole?
You can serve this casserole on its own or pair it with cauliflower rice or in corn or flour tortillas. This is even great with a simple fresh side salad.
If desired, top the casserole with slices of avocado, salsa, or sour cream.
Can this casserole be frozen?
Of course! Portion this out and place it in airtight containers. Freeze for up to 3 months. Before reheating, thaw in the fridge.
Leftover fajitas make an amazing lunch!
How to slice the chicken breast to use for chicken fajitas?
Into thin half-inch strips, slice the chicken breasts horizontally against the grain.
The smaller pieces, the quicker they cook.
