  • Apple Preparation: Proceed to peel and core each apple. Two of these apples should then be finely diced into approximately half-inch pieces, while the third apple should be coarsely grated using the larger side of a box grater. Transfer these prepared apples into a medium-sized mixing bowl, adding two tablespoons of freshly squeezed lemon juice and one teaspoon of lemon zest. Stir the mixture until the apples are uniformly coated. Reserve this mixture for later incorporation.
  • Batter Formation: In a separate, capacious mixing bowl, combine the eggs and granulated sugar. Employ an electric mixer to blend these ingredients until the mixture achieves a light color and a fluffy consistency, a process that should take no more than 2-3 minutes. Subsequently, integrate the milk, olive oil, and pure vanilla extract into the mixture, continuing to mix until fully combined. Sift the all-purpose flour, baking powder, and salt directly into the mixture, blending until a smooth and consistent batter is formed, devoid of any lumps.
