Ingredients
  

  • ¼ cup 60 ml of olive oil
  • 1 yellow onion diced
  • 2 stalks of celery diced
  • 2 cloves of garlic minced
  • 2 teaspoons of kosher salt
  • ½ teaspoon of coarse ground black pepper
  • 1 large potato peeled and diced
  • 2 carrots sliced
  • 1 cup 150 g of corn
  • 1 cup 150 g of peas
  • 1 cup 150 g of green beans, chopped
  • 2 vine tomatoes diced
  • 4 cups 946 ml of chicken broth
  • 2 cups 480 ml of V-8 juice

Instructions
 

  • In a large stock pot, heat the olive oil over medium heat. Sauté the onions, celery, and garlic for 4-5 minutes until they turn translucent and release their aromatic flavors.
  • Add the remaining ingredients to the pot: kosher salt, black pepper, diced potato, sliced carrots, corn, peas, chopped green beans, diced tomatoes, chicken broth, and V-8 juice.
  • Bring the mixture to a boil, then reduce the heat to a gentle simmer. Let the soup simmer for 30 minutes, allowing the flavors to meld together and the vegetables to become tender.
  • Once the soup has simmered to perfection, remove it from the heat and let it cool slightly. Serve it piping hot and savor each spoonful of this comforting Vegetable Soup.
