Stuffed sweet potatoes have become a regular on my meal plans. This is not the first I’ve stuffed potatoes, but certainly my favorite! Turkey taco-stuffed sweet potatoes give a fun, Mexican twist to my regular stuffed sweet potatoes. And this takes just 20 minutes to make!
What You Need To Make These Turkey Taco Stuffed Sweet Potatoes
- Medium sweet potatoes
- Olive oil
- Ground cumin
- Salt
- Ground pepper
- Lean (93%) ground turkey
- Garlic cloves
- Chili powder
- Dried oregano
- Paprika
- Canned crushed tomatoes
- Grated pepper Jack cheese
- Minced flat-leaf parsley
How To Make Turkey Taco Stuffed Sweet Potatoes
Step 1: Cut the cooked sweet potatoes in half lengthwise before scooping out the flesh.
Step 2: Mash the flesh with olive oil and cumin.
Step 3: Scoop the mixture back into the skins, then top with the cooked, seasoned ground turkey mixture and sprinkle with cheese.
Step 4: Broil to melt the cheese.

What cheese is best to use to make these stuffed sweet potatoes?
I use pepper Jack, but you are welcome to use other varieties like cheddar, Monterey Jack, or even Parmesan cheese.

Turkey Taco Stuffed Sweet Potatoes
Ingredients
- 1 tsp olive oil
- ¾ lb. lean (93%) ground turkey
- 2 medium sweet potatoes
- 1 ¼ tsp ground cumin divided
- 4 garlic cloves minced
- ½ tsp dried oregano
- 1 tsp chili powder
- ½ tsp paprika
- ¼ c. grated pepper Jack cheese
- 1 ¼ c. canned crushed tomatoes
- 2 tbsp minced flat-leaf parsley
- ¼ + ⅛ tsp salt
- ¼ + ⅛ tsp ground pepper
Instructions
- Using a fork, pierce the sweet potatoes. Cook in the microwave for 4 to 5 minutes on high until tender. Set aside to cool.
- Once the sweet potatoes are cool enough to handle, slice them in half lengthwise. Very carefully scoop the flesh out.
- In a medium-sized bowl, place the potato flesh and mash using a fork. Add the olive oil, ½ tsp cumin, ¼ tsp salt, and ¼ tsp pepper. Mix well.
- Between the potato skins, evenly divide the mashed sweet potato and lay them on a baking sheet.
- On medium-high, heat a large nonstick skillet. Lightly grease the skillet using cooking spray, then add the ground turkey. Cook until done while breaking the meat using a wooden spoon. Then, add the garlic, chili powder, the rest of the ¾ tsp cumin, oregano, paprika, and ⅛ tsp salt and pepper. Continue to cook for an additional minute before stirring in the crushed tomatoes.
- Into each sweet potato skin, spoon the turkey mixture and top each with 1 tbsp grated cheese. Place the stuffed sweet potatoes into the preheated broiler for about 30 seconds until the cheese has melted.
- Before serving, garnish the turkey taco stuffed sweet potatoes with some parsley. Dig in!
